Happy Snack: Stuffed Bell Pepper

Pepper stuffed with cheese and egg
This time I want to share with you an interesting idea how to prepare a happy and bright summer snack. We all know that bell pepper, cheese and egg make a quite tasty combination but how to make it look bright and colorful on our kitchen table? Here is my ‘how’ suggestion:)


It takes maybe 10 mins to prepare everything (not taking into account the time it should cool in the fridge). To put if briefly, my dear readers, that’s just one of my ideas, you are welcome to experiment with ingredients and add any seasoning you like ;)

Ingredients:

  • 3 bell peppers
  • 300-400g cheese
  • 3 boiled eggs
  • 2-3 cloves of garlic (optional)
  • mayonnaise (or any other sauce you think will fit)

Preparation:
1) Grate the cheese. Crush garlic cloves using garlic press and add it to grated cheese.

2) Add a bit of mayonnaise sauce to the bowl with cheese and garlic, and mix all ingredients thoroughly.

3) Rinse the pepper, cut off the top just below the shoulder and remove the entire stem end, so it remains empty inside.

4) Stuff the pepper with cheese mixture, leaving a space inside, in the middle.

5) Put the whole egg inside the pepper, if there is still some extra space left, stuff it with cheese mixture, packing it tightly.

6) Allow to cool in the fridge for 3-4 hours. Then slice it with sharp knife and serve.

Tip: try to use peppers of different colors, if possible. It makes the dish look more colorful and bright! Enjoy and leave your feedback about that!
